Quick Fish

For lunch today I mowed into some Subway! It’s been a while!

I got a turkey and provolone on wheat with lettuce, spinach, and tomatoes. Dee-lish!



Now for dinner and almost too easy way to cook fish!

One of my favorite things for dinner is fish! Specifically I like salmon or a good white fish like cod or halibut, but sometimes will go for tilapia or swai because they are so budget friendly!

Since Torrance loves tilapia, that was the fish of choice at the grocery store this week. I do like tilapia because it is flexible and you can cook it a lot of ways. One of my favorite is also one of the quickest and delicious ways as well!

I start out by heating a little olive oil in a medium pan. I then place the tilapia fillets (not frozen) in the pan. Tonight I cooked 2 fillets.

I squirt a little lemon juice over the top and then sprinkle with garlic powder and black pepper. After 3 minutes I flip and dust with a little more pepper and garlic powder and cook another 3 minutes or so.

When fish is flaky but still a little shiny it is done!


I enjoyed it alongside some steamed peas, mini Vidalia onion bulbs, and mushrooms; garlic mashed potatoes, and a couple slices of tomato. Yum!


That picture doesn’t look that appetizing for some reason, I think because of the weird color of the peas.


After dinner I decided it would be a good time to head down to the Y down the road to take a quick tour. I was surprised that it was still a little busy for 8:30 at night. Overall I like it and the atmosphere and it had a huge fitness center area with tons of free weights, weight machines, and card equipment. It also had 2 very large group rooms for classes too!

While I was there I just did a quick card routine and used a couple of the right machines that I have really been missing! I was happy to get a mini workout in. They said I can come back 3 more times for my “trial membership” so I just might go for a longer workout tomorrow!


I’m off to bed, someone is waiting and falling asleep without me….
