Carmel Apple Cake

Morning!

I am gearing up for a busy day/week. I spent another day helping Torrance out on the tool truck. I didnt spend the whole day like a  man this time. I helped out for about 2 hours and then headed home to take care of all the stuff that had been neglected the day before. In particular, laundry (ew). He finally made it home lat night with the tool truck looking good as ever after he put in another full day working on it. It is like a whole new truck! Torrance is NOT one to work an entire weekend so I am very proud of him for putting in the extra effort!

Now, guess what type of morning it was….

Yep, big huge giant coffee day!!

So last night, since I was sorta pooped and in a daze from laundry and working all weekend, I did a little relaxing and baking!

I decided to make a carmel apple cake that I havent made in maybe a year.

It tasted like more of a breakfast coffee cake to be honest, and almost reminded me of a pancake! It was so moist and fluffy!

Since it was so giant and doesnt have chocolate in it, it probably wont go very fast in our house so I brought half of it to work for my co-workers to enjoy.

Here is the recipe:

CARMEL APPLE CAKE

Prep time – 10 min
Bake time – 90 min

Ingredients:

  • 2 cups sugar
  • 1 1/2 cups oil
  • Juice of 1 lemon
  • 2 teaspoons vanilla
  • 2 eggs
  • 3 cups flour
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups apples, chopped (I chop mine really small, but thats per preference)
  • 1 jar of carmel topping – I use smuckers (or if you have your own recipe, feel free to make your own)

Directions:

  • Preheat oven to 325 degrees and grease and flour 9 x 13 inch pan.
  • Cream the sugar, oil, lemon juice, vanilla and eggs together. Add the dry ingredients.
  • Fold in the apples
  • Disperse cake batter evenly into pan and spoon the carmel topping over batter and swirl into cake batter with spatula or knife
  • Bake for 1 1/2 hours at 325 degrees – start checking the cake at 60 minutes to check for doneness and after that in 10 minute intervals.

    Whoa… I bet that cake WOULD be good served up like a pancake.. warmed up with some maple syrup!

    Today was a giant iced TEA day for me. Definitely needed the caffeine!

    This weekend I went to our friend Ben’s 31s Bday party… took me right back to college hahaha I napped for 5 hours yesterday after eating breakfast!
