The Chicken Pasta Post That Wasn’t
I just realized it is Friday! Yay! And September? AND my blogs 1 month-o-versary. Aww…. what a fun end of the week! Except I realize that I promised to have my “The move” page done for you guys by the end of August, and it is still not up. I am almost done with it! Promise. I tried to cut a few corners to shorten it up a bit because it is so long but it just didn’t really happen. I am finishing up the long part where we got stranded in Illinois for 5 days… Hopefully over this long weekend I should be able to get it finished up!
Oh, and last night at like 8:00 I spent 45 minutes typing out an amazing post that included my version of a yummy simple chicken pasta. However, when I went to post it and the summary page told me “thanks for posting, this post has 21 words…” which I knew 21 words was note right so I went to look… For some reason it had my first sentence and 1 picture. It also had my bullets with nothing by them. It was so sad. Instead of retyping in frustration I went to watch TV and figured I’d share this morning instead 🙂
Simple Chicken Pasta
Makes 2 servings
Total time: 20 minutes
- 2 servings whole grain angel hair
- 1/3 cup milk
- 2 cups water
- 1 tbsp olive oil
- some chopped fresh basil (or dried)
- 1/2 cup low fat mozzarella
- tbsp minced garlic
- 2 boneless, skinless chicken breasts (or 1 large)
- 1 cup sliced mushrooms of choice
- 2 cups broccoli
- 1/3 cup white wine
- any other veggies of choice
- In medium saucepan, boil water, milk, and oil. When boiling, add noodles and cook until done. Drain remaining liquid (if any).
- In medium pan, saute mushrooms and broccoli in wine (I add a little black pepper as well) for about 4 minutes or until cooked to preferred done-ness
- cook chicken and dice – I actually diced chicken and sautéed in medium saucepan with a little wine and peppers as well
- Stir cheese, garlic, and basil into noodles. Add veggies and chicken to mixture
- Serve with fresh diced tomatoes on top
I love to add sautéed yellow zucchini squash and/or peas to this mix as well!
I used the remainder of my tomatoes for my salad, and served myself up a small portion of pasta just so I could enjoy a piece of garlic bread with it. YUM!
This morning when I woke up and opened the blinds like I usually do, it was a little eerie outside. It had rained last night so it was foggy. I ended up leashing up the brown dog and taking her on a stroll. Pretty mellow this morning, just a short jog and mostly walking for a total of about 1 1/2 miles.
I headed back to get ready for work. Before I hopped in the shower I couldn’t help but notice how nasty and greasy my hair was! haha, since I was in a hurry yesterday morning I skipped washing my hair.
That’s not just a spunky bun on top of my head friends, that is a true greasified mess. Haha, kidding… (ok not really kidding).
(And I dunno what is with my creeper face again, actually maybe it is a look of disgust of hair grease? kidding)
Since I was starving, I made my delicious homemade breakfast sandwich because eggs just sounded like they would hit the spot for some protein! And you wouldn’t believe it but I didnt even get coffee this morning!
Reason being, Starbucks was poppin and I was feeling a little impatient so I just strolled the parking lot and headed right to work. I feel oddly perky this morning already so I am not too sad without coffee (at least not yet!)

What kind of pasta add ins do you like? What is your favorite type of noodle?
I love mine with shrimp, peas, and mushrooms – those are some of my favs. And depending on what exactly I am making depends on the type of noodle but angel hair and rigatoni are my fav!
Do you have any fun plans for the holiday weekend?
I do get Monday off (yay!) and since Torr and I spent all last weekend working, we plan to have a pool day tomorrow since it is supposed to be nice. I would like to go out to a nice dinner this weekend too. I am feeling like it is time to go out and explore our new surroundings a little more!
