Pumpkin Spice Chocolate Chip Cookies

Monday, ew.

It was somewhat difficult to get out of bed this morning, mostly because of this adorable thing.

I somehow managed to make it up in time to get ready for work which was a shocker because I was dragging major ass. I am blaming it on all the food we ate at the fair yesterday. Food hangover!

And sadly – I did not get my weekend to-do list  done (at all). So I will be spending some time this week working on that!

I am happy to report the power came back on 2 hours or so after we had been home. It was really eerie outside since our whole apartment complex was dark, no street lights or anything.

I didnt get to finish my laundry….but, I did end up baking my pumpkin spice cookies! If you love soft, really moist cookies you will love these. They almost have more of a consistency like a muffin because they are spongy. Definitely one of my favorites!

I obviously need to work on being consistent with my cookie dough spooning because they are all different sizes. And shapes… check out the one in the bottom left corner.

I am so excited to share this recipe with you guys since it is one of my absolute favorites!

Pumpkin Spice Chocolate Chip Cookies

Yield: 2 dozen cookies
Prep Time: 10 minutes
Bake Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 1/2 cup butter
  • 6 tsp water
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 can pumpkin
  • 1 tsp vanilla extract
  • 2 1/2 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp nutmeg
  • 2 tsp cinnamon
  • 2 cups chocolate chips

Instructions

  1. Preheat oven to 350 and grease cookie sheets
  2. In large bowl, cream together butter, water, and sugar until fluffy. Beat in egg and then stir in pumpkin and vanilla. Combine dry ingredients and then gradually mix into cream mixture and then stir in chocolate chips
  3. Bake for 15 mins in oven (or until light golden brown)
