I actually kind of cant believe it is Thursday already. Exciting!
Check out dinner from last night. Looks simple and delicious… right?
That is steamed broccoli, a baked potatoes with a little olive oil margarine, cheese, and pepper, and my fool-proof chicken breast using this method (found in my recipes section). That is the super moist fool proof method…..unless your name is Torrance.
I had the good idea to sort of get dinner part-way ready before I headed off to fitness class. I prepped the chicken and put it in the oven and set the timer for 35 minutes and told Torrance to just pull it out when the timer goes off and just leave it in the foil and it will stay warm. And then also start the microwave for the potatoes – which I had already placed in the microwave and set the time on.
When I returned home from class I pulled the steamed baked potatoes out of the microwave, and threw the broccoli in there to steam. I then realized Torrance had turned the oven off but left the chicken in there to keep warm.
To summarize, we had chicken jerky, half cooked broccoli, and rubbery potatoes. I think the potatoes were a little overcooked too (my fault). Oh well.
Even though dinner was a fail, fitness class was excellent. With the TRX straps with did hamstring curls this time, and we also did sled pushes (my butt is sore!) and a new one for me – we flipped tractor tires. It was definitely interesting, and an awesome workout!
This morning I am feeling really tired, I didnt sleep well last night for some reason – just tossing and turning. Hate that! So I am a little on the groggy side. It did perk me up a little when I went out on the porch though… I was tricked! It was nice and sunny out but was a chilly 44 degrees!
What that does mean for today though is that I am whippin out the boots. I have been dying to wear this adorable new sweater dress I got but when I put it on I wasnt really feeling it for work. I think it is a little too short for the office. Luckily, because it is a thin material I was able to fold up the bottoms and make it into a cute shirt paired with my boots and a black skirt. Easy fix 😉
And also, I messed up at the grocery store and grabbed the wrong english muffins. I grabbed the NOT pre-cut type. Not that big of a deal, but I apparently have issues with slicing things because, well, they always turn out uneven like this:
Oh well. It all tasted the same.
Are you completely shocked not to see a PB banana sandwich or egg n jelly? I know, me too.
