Whhhhat Monday already?
If you’re playing catch up from the weekend, you didnt miss a whole lot around here. I figured out my “natural” wake-up time, and went out to dinner, did some house stuff, and baked some cookies (recipe below!).
I, once again, woke up a little earlier this morning, which I can definitely get used to because Im managing to get stuff done 😉 Imagine that.
For breakfast this morning I am enjoying an egg n jelly sandwich. Welcome back old friend.
Here is an easy chocolate lovers recipe (Torrance…); the cookies that I baked yesterday!
I have seen variations of this recipe on a few other blogs and not sure exactly where it came from originally! But I mixed it up a little and these cookies are super chewy and moist, resembling a brownie. So good!
Yield: 18 cookies
Prep time: 10 minutes
Bake time: 9 minutes
- 1 cup flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 5 tbsp butter
- 7 tbsp unsweetened cocoa
- 2/3 cup sugar
- 1/3 cup packed brown sugar
- 1/3 cup lowfat vanilla yogurt
- 1 tsp vanilla extract
- Cooking spray
- Preheat oven to 350 degrees and lightly spray baking sheet with cooking spray.
- In small bowl, combine flour, baking soda, and salt. Set aside.
- In a medium-sized saucepan, melt butter over medium heat. Remove from heat and stir in cocoa and sugars (mixture will resemble coarse sand). Add yogurt and vanilla, and stir until combined. Add flour mixture, stirring until moist. Batter will be thick and sticky.
- Drop 2 inch balls onto cookie sheet (about 2 inches apart) and bake for 9 minutes. Cookies will be extremely soft when first removed from oven. Allow to cool and harden for a few minutes on baking sheet and then transfer to wire rack or clean counter surface to finish cooling!
