A Day of Veggies & My Kitchen Is After Me
Gooooood morning! I say that because I have already had 2 cups of coffee! (Weeeee!)
Breakfast this morning consisted of some applesauce, coffee, and an almond butter and banana sandwich (with cinnamon!). Surprisingly the switch to almond butter from PB hasnt really phased me – it is actually really good!
And check out this veggie packed lunch yesterday!
That beast of a salad included:
- left over steamed green beans
- a little shredded turkey
- fresh mozzarella
- crushed up pita chips
- Newman’s Own Balsamic Vinniagrette
With some pita chips and humus on the side for a snack later on 😉
My coworkers ooh’d and ahh’d over it when I came back in and asked how I had the patience to do that because they are always too lazy to make a giant salad like that at home. I definitely know what that mean, it takes lots of cutting and prep, but it is worth it! I would prepare it the night before, but it is never the same because it gets all wilty by the time lunchtime rolls around the following day!
Yesterday was quite the rainy day – and I was happy to see that by the time I went to let Kona out before I headed off to training, it had stopped… but luckily I still opted to put on a raincoat because out of nowhere it just started to downpour.
Which left me with one stinky, wet, brown dog.
She is sitting in my kitchen looking like a pathetic, wet, baby otter because I forgot to get the towel ready before I went outside so I made her sit there while I hurried and grabbed one to dry her off (which she hates).
I left feeling really good (and shweaty as usual!), and my abs are absolutely burning like crazy today – but I love that feeling!
Now lets talk about when my kitchen turned on me.
I had planned to cook some delicious chicken sandwiches with a side of these:
So after I put those in the oven to bake, I got ready to prep the chicken breasts, but it seemed sort of funky…. like really fatty. I checked the label on the new chicken I got and sure enough, I grabbed thighs instead of breasts on accident. Oops.
Not ideal for a sandwich so I put them away to use for something else on a later day and decided that a burger would do for dinner instead.
Only to find… the buns I had on hand were bad and I didn’t have any other bread to put it on (which doesn’t fly with Torrance). So? Now what? (and the Sweet Potatoes were almost done)!
Torrance said he didnt care because he was just too starving. So I quickly cooked up some black beans for him to enjoy with a leftover enchilada. And for myself, I cooked up some veggies (I used this mix again!) and a chicken sausage (with a little cheese mixed in) to eat alongside my sweet potatoes.
It was actually really, really, good and will be a repeat in the near future for sure!
Once all that fiasco was done, I was ready to clean up the kitchen and head to bed. I cleaned everything up and loaded the dishwasher only to find…. the dishwasher would not turn on. MAN!
I called Torrance over to take a look at it (incase he had any manly tricks?) and he confirmed that it was in fact not working (so smart…)
SO, I decided to just call it a night and head off to bed. Come to find out this morning… it was an on/off switch in a whole other area of the kitchen that must have gotten bumped. Geesh!
