A Day of Veggies & My Kitchen Is After Me

Gooooood morning! I say that because I have already had 2 cups of coffee! (Weeeee!)

Breakfast this morning consisted of some applesauce, coffee, and an almond butter and banana sandwich (with cinnamon!). Surprisingly the switch to almond butter from PB hasnt really phased me – it is actually really good!

And check out this veggie packed lunch yesterday!

That beast of a salad included:

  • lettuce
  • spinach
  • cucumber
  • tomato
  • avocado
  • left over steamed green beans
  • peas
  • a little shredded turkey
  • broccoli
  • fresh mozzarella
  • crushed up pita chips
  • Newman’s Own Balsamic Vinniagrette

With some pita chips and humus on the side for a snack later on 😉

My coworkers ooh’d and ahh’d over it when I came back in and asked how I had the patience to do that because they are always too lazy to make a giant salad like that at home. I definitely know what that mean, it takes lots of cutting and prep, but it is worth it! I would prepare it the night before, but it is never the same because it gets all wilty by the time lunchtime rolls around the following day!


Yesterday was quite the rainy day – and I was happy to see that by the time I went to let Kona out before I headed off to training, it had stopped… but luckily I still opted to put on a raincoat because out of nowhere it just started to downpour.

Which left me with one stinky, wet, brown dog.

She is sitting in my kitchen looking like a pathetic, wet, baby otter because I forgot to get the towel ready before I went outside so I made her sit there while I hurried and grabbed one to dry her off (which she hates).

Yes, lovely.

Training went fabulously. I loved the mix. There wasn’t anything too difficult that made me shake, but definitely a challenge nonetheless – specifically in the leg and ab area!

I left feeling really good (and shweaty as usual!), and my abs are absolutely burning like crazy today – but I love that feeling!


Now lets talk about when my kitchen turned on me.

I had planned to cook some delicious chicken sandwiches with a side of these:

So after I put those in the oven to bake, I got ready to prep the chicken breasts, but it seemed sort of funky…. like really fatty. I checked the label on the new chicken I got and sure enough, I grabbed thighs instead of breasts on accident. Oops.

Not ideal for a sandwich so I put them away to use for something else on a later day and decided that a burger would do for dinner instead.

Only to find… the buns I had on hand were bad and I didn’t have any other bread to put it on (which doesn’t fly with Torrance). So? Now what? (and the Sweet Potatoes were almost done)!

Torrance said he didnt care because he was just too starving. So I quickly cooked up some black beans for him to enjoy with a leftover enchilada. And for myself, I cooked up some veggies (I used this mix again!) and a chicken sausage (with a little cheese mixed in) to eat alongside my sweet potatoes.

It was actually really, really, good and will be a repeat in the near future for sure!

Once all that fiasco was done, I was ready to clean up the kitchen and head to bed. I cleaned everything up and loaded the dishwasher only to find…. the dishwasher would not turn on. MAN!

I called Torrance over to take a look at it (incase he had any manly tricks?) and he confirmed that it was in fact not working (so smart…)

SO, I decided to just call it a night and head off to bed. Come to find out this morning… it was an on/off switch in a whole other area of the kitchen that must have gotten bumped. Geesh!


  • So do you ever have days where you just feel like your kitchen is after you?
  • What is your nut butter of choice?
  • Do you prepare big salads for yourself a lot? Do you prepare ahead of time?

  1. awwww, i definitely have days like experience with baking a coconut custard pie last weekend for instance..messsssy.

    i LOVE those sweet potato puffs, i’m sad theyve been all out at my grocery store for a bit.

    right now i just use PB, but i think i might switch over to almond butter too.

    ive prepared big salads for myself sometimes…but i find it difficult too. i feel like i buy alot of ingredients and only end up making one big salad and then get lazy and all the ingredients go bad. i need to be more diligent about it, lol.

    • Me too!! I will use the stuff to make one or 2 salads and then it will go to waste… which I HATE wasting food. I have been trying to buy very small cucumbers and such for that reason!

  2. Have you ever tried Sunflower Seed butter? I decided one day that I was eating too much peanut butter and wanted to switch to something I liked less so I would eat less of it. Let’s just say that didn’t work out and that I liked sunflower seed butter BETTER than PB. How is that even possible? I don’t know. I think all nut butters are in an evil scheme to make my pants tighter.

  4. I try to prepare salads for myself, but since I live alone, stuff I don’t manage to use or get to lazy to use goes to waste and I HATE wasting food. I have never thought the kitchen was against me, but I had a bad experience with my water heater last year and I’m still not over it….

  6. Alexia sweet potato fries are THE best! Yummmmmo!

    I am trying to make salads for lunch each day, but I always keep them pretty simple. I am trying to stop using dressing and learn to love the taste of pure veggies–it is a process!

    Also, I completely had one of “those days” yesterday. They are the worst.

  7. Mmm at that salad and those sweet potato puffs! I bet they’d be FAB ON the salad! I definitely agree about prepping salads to be worth the time and effort! Eating right is definitely a priority of mine, which is why I don’t mind spending those extra few minutes chopping up veggies—> worth it in the long run!

  8. I love making big salads like that. I tend to either chop up a bunch of veggies on weekends to use all week long, or just throw in whatever I have on hand. Either way, I usually end up with some interesting combinations!

    Favorite nut butter: almond. almond all the way.
