Everybody Limbo & I Finally Made Roasted Cauliflower
I have to admit, I woke up thinking it was Friday. You can only imagine my disappointment! Thursday is still pretty exciting.
And for breakfast this morning, well naturally… it is the same as yesterday’s!
Almond butter, cinnamon, and banana sandwich (with a side of frozen strawberries of course!)
Lunch was speedy yesterday because I had a lot going on and couldnt make it home, so I ended up running to Subway. I figured that would help me get in some extra veggies too, to make up for the lack of them on Tuesday!
A turkey on flat bread with cheese, lettuce, tomato, spinach, and cucumbers… and apparently a bottle of mustard.
So training last night was awesome. Reason being – I worked extra hard. Not that I dont usually work super hard, but we had a fairly large group so we got paired up at stations. I was paired up with a girl who is just in amazing shape and always pushes really hard, so it was extra motivation for me. In a good way though, not in a “bitch-leave-me-alone” way like the annoying treadmill lady.
When I first walked in, there was a strange bar setup at a station that made me think we would be doing the limbo. We actually instead did a rocking type movement with a very wide squatting stand and we shifted our weight to move our head and shoulders under the bar. It worked my legs and butt super good! I was definitely feeling it by the last round!
We also did squats on air discs, push up rows with dumbbells that look like this:
And we did an awesome hip/leg move with slider discs on our feet. In a push up position, we slid our foot to the side and up as far as we could.
Of course there were other moves thrown in there, but as usual those were the ones that really stuck out to me. I walked into the house like an
ugly, sweaty zombie. We dont always do a cooldown after training but I typically stick around and just sort of walk around and socialize (like everyone else) afterwards. But even when I get home (which is across the street) I am usually still a sweaty tired disaster (especially after I walk up. I figured you would just like to know that because Torrance definitely loves it…. ha!
For dinner, I cooked up some chicken breasts marinated in a Caribbean jerk sauce with a side salad.
And I attempted something I have never made before: roasted cauliflower!
I have had it at other people’s houses but why I have never made it myself I dont know. It was so simple and wonderfully delicious. I just cut up a head of cauliflower, mixed it in a bowl with olive oil to coat it, and then put it on a baking sheet and sprinkled with plenty of garlic powder and black pepper and baked on 400 degrees for 30 minutes.
The perfect side, and Torrance even likes it!
Torrance wanted something chocolate. And I just wasnt in the mood to bake… but, luckily for him I am superwoman and the best girlfriend in the world and slaved away forever to bake him some chocolate chip muffins.
Ha! Not! Really, luckily for him, there happened to be a box mix of chocolate chip muffins thanks to good ol’ Betty Crocker 😉 Sometimes I love that woman.
It is still undecided if I will be going to training tonight again or tomorrow night instead… I suppose I will see how the day goes!

I prefer to do stuff from scratch, but I for the ease of things (and especially if it’s just for Torrance, ha!) I use them from time to time!
