Hot Chocolate Cupcakes & My First Tone It Up Workout

I hope everyone is enjoying their Sunday!

I most definitely am. Last night I actually started to feel like I was coming down with a cold but it may have just been allergies. I hate that feeling when you cant breathe out of your nose at all.

Here’s my quick weekend run down….

Friday night was spent at training. We had a great circuit.


That was about half of it. Those ab “dollies” at the bottom right definitely brought the most pain out of the bunch. We did a “witches brew” on them. Basically with our forearms on the dolly holding onto the front handle (almost like a plank position) and our knees on the mats, we did a stirring motion using your hips and abs to move. Oye.


Saturday just involved some random stuff here and there along with dinner . Where else than Ruby Tuesday so that I could enjoy their salad bar?

I also had a (ok a couple) fantastic cocktail there.

I cant even remember what it was called but it was a lightened up pink lemonade. It included Absolut Citron, a touch of pink lemonade, and pomegranate tea (which is what you see floating around). So good.

When we got home I was in the mood to bake. I think the dessert menu staring at me throughout dinner on the table at Ruby’s sent me subliminal messages all night having to look at those cupcakes.

So cupcakes it was…. with a little inspiration from Pinterest of course.

Hot Chocolate Cupcakes – with Marshmallows!

Genius I tell ya!

Looks fancy I know, but all that was used to make these babies was this:

Prepare the cake per the instructions on the box (I supped applesauce for the oil). Make sure you use cupcake papers for this one (as opposed to just pouring the batter into the tins).

While those are in the oven, prepare the frosting. To do this, in a small bowl mix 1 cup whipped vanilla frosting with 3/4 cup marshmallow crème. Mix well until completely smooth.

Spoon frosting into a Ziplock baggy. I refrigerated that for a few (about 15 minutes) so it would be a little more stiff and easier to frost with.

Once cupcakes are completely cool, I used a sharp knife to poke a small slit in the side of the paper and inserted half the pretzel. Keep in mind this wont be very “secure” and is more for looks to give the appearance of the mug handle.

To frost: Cut a small hole in the corner of the ziplock baggy and pipe the 3 dollops of frosting onto the top to simulate the appearance of marshmallows.

Sprinkle a little but of cocoa over the top of that and voila!

I may end up using this frosting mix again for other things because it is delicious.

It may have been a good thing that my nose was really stuffy last night and I couldn’t hardly taste anything or else I may have eaten half of these. I somehow have managed to only inhale 2 of them and I plan to bring the rest that Torrance hasn’t cleaned out to work tomorrow to get them out of the house.


And then that brings us to today.. where I have been completely lazy and it is great.

Though I did finally try my first Tone It Up workout down in the apartment gym.

I knew I wanted to get a little run in this weekend but since that just doesn’t sound that appealing on it’s own to me, I decided I would add something else in to supplement it. So I meandered over to their website to find a fun workout to do.

The Bikini Abs video stood out to me right away and I’ve been on an abs/core kick. Plus, all that was needed was a stability ball, which luckily, even though the gym at our apartment has limited equipment, there a few of them down there.


After my measly 1.5 mile struggle run, I did 15 reps and 3 sets of each move….except the inner thigh challenge (last one), I only did one set of that one… haha if only I had a video of me trying to do that, I was a shaky mess.

I’m off to cook an early dinner  (well, early for me since I usually eat at 7:30-8!) and then catch up on my TiVo.

    Since I havent been doing anything on the weekends the last few weeks usually 3 days but one summer hits I am pretty active on the weekends, plus I hope to get some cardio in on the weekends now too.

  2. Those cupcakes look great! We went to an awesome restaurant last night, and I had their tasting menu which included this awesome BBQ pork tenderloin, plus an apple pastry with ice cream and caramel for dessert. I could easily eat that meal every night! 😉

  3. Those cupcakes are adorable! I used to use marshmallow cream mixed with light cream cheese as a fruit dip – so delicious!

    I have done several TIU workouts – that bikini abs one is great! I don’t remember the names of the other ones I have done, but anything that says “bikini body…” always grabs my attention (who doesn’t want a bikini body?!).

    Best thing I ate this weekend was Friday night at a little cafe – I had homemade tomato basil soup with half of a grilled cheese made with brie and apricot preserves – I think I licked the plate and the bowl.

    I usually take 1-2 rest days each week (always Sunday and sometimes Saturday). Have a GREAT week, Andrea!

  4. Those cupcakes look DELICIOUS! What is it about marshmallow creme?! It is just so yummy and I love the combo of marshmallow and pretzels!

    By the way, those ab dollies look PAINFUL. I think they would kill me!

    I have never tried a TIU workout. I might need to give one a try!

  5. Love Tone It Up workouts! They are the best since the girls actually DO the entire workout for you in the videos; major props to them for that (even though they look WAY better at the end than I ever do!).

    Your cooking ideas lately from Pinterest are AMAZING; keep ’em coming 🙂
