It’s Monday! & Bourbon Chicken

Monday! I am weirdly excited this Monday morning because….

A) This was waiting for me at the office this morning (my Foodie Penpal box from the lovely Kalee!):

B) This happened (and extra almond buttery-banana-y goodness). Craved this alllll weekend.

and; C) Things are back to normal for me!

Don’t get me wrong – I thoroughly enjoyed having Torrance’s mom here and getting a little break from the usual, but I definitely look forward to being back to routine – and definitely back to training this week!

We actually didn’t do anything exciting for St. Patrick’s Day (besides wearing green!) Though we were out in the sun during the day and got quite the flip flop tan!

To kick things off, I figured I would share a fun recipe I tried over the weekend.

Now, even if you don’t like “Chinese” food, this is has a fabulous taste. Sadly I didn’t have any good veggies on hand to mix in because my kitchen was depleted (this was before my grocery shopping trip this weekend!) but obviously it would be ideal with some broccoli, sugar peas, water chesnuts, mushrooms, and whatever other veggies you prefer.

I got the idea a few weeks ago when I saw a recipe that sounded good but there were definitely some ingredients that werent appealing to me (spicy!) so I put it on hold until I had time to tweak it. And then I found another similar recipe that had some different ingredients and ended up mixing the two to come out with this master piece.

Bourbon Chicken

Prep Time: 10 minutes
Cook Time: 30 minutes
Yield: 3 servings


  • 1 pound boneless chicken breasts; cut into bite-size pieces
  • 1 tbsp olive oil; (1-2)
  • 2 tbsp minced garlic
  • 1/2 tsp ground ginger
  • 1/4 cup apple juice
  • 1/3 cup brown sugar
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
  • 1 tbsp cornstarch
  • Desired sauteed vegetables
  • Rice of choice (I used Jasmine)


  1. Heat oil in a large skillet. Add chicken and cook through until lightly brown.
  2. While chicken is cooking, in small bowl, mix all ingredients (besides veggies) and stir.
  3. Once chicken is done, remove from pan and set aside.
  4. Add sauce ingredients and heat (light boil) stirring until ingredients are dissolved and combined thoroughly.
  5. Add chicken to sauce and bring to a hard boil.
  6. Reduce heat and simmer for 20 minutes, uncovered.
  7. Serve over hot rice.

  1. I love almost ALL Chinese food, but that’s not why I’m happy today. I’m happy that a friend treated me to lunch, and I’m super happy that I have a pistachio cupcake waiting for me for dessert!

  2. I ❤ Chinese food!!!! I'm picky about it too because i hate seafood. And I don't really like beef. or peas. But other than that! Any Chinese chicken!! We're having a mini pot luck at work so I'm excited about that today. We're going to the gym after work.. I'm sure I'll run, maybe do some stairs, kettlebells. Who knows!

  4. Yum, that looks awesome!!! I love homemade Chinese food like that. If you like shrimp, you need to try that orange peel shrimp I posted on my blog a while ago (I got the recipe from Jenna at Eat Live Run). It was SO unbelievably good. And I made the same recipe with chicken another time, too, and it was equally delicious!

    That bourbon chicken looks awesome. My hubs would love it. But if he wants me to make it for him, he’s gonna have to let me quit my job and be a house wife. That’s fair, right?

    one thing that made me happy today is that tomorrow is the first day of SPRING! yay

    That chicken looks yummo…i do like chinese food but it doesnt like me very much for some reason it always messes my tummy up…i only eat it once or twice a year 😉

  7. I have a flip-flop tan already this year too! It’s always an inevitable for me when the weather is warm. I love Chinese food and this bourbon chicken looks fantastic!
