Salmon, Biscuits, & Seasonal Produce
Since I was
really a little sore yesterday from my first day back to training, I decided to stay home last night – but I will be headed there again tonight!
I took Kona on a long walk because word on the street (do people say that still?) is that a little nighttime storm was coming. And nothing is worse than walking a brown dog in the rain, because she likes to go in all the puddles.
So I gave her a long walk and then headed up to cook some dinner.
Remember how I have been having such a hard time with fish at my grocery store lately? I actually got super picky about it and I have made friends with one of the men at the seafood counter. He always gives me all the details – like if stuff came in frozen, fresh, etc, it has been here for this many days, that’s not really a good deal… etc. Yes this is true.
Anyway, there was finally some salmon that looked decent, so I picked some up when I did my weekly grocery shopping on Sunday and made myself a note to use it ASAP before it had a chance to go bad.
So I cooked it up last night. I just did it in a pan with some lemon, olive oil, garlic powder, and black pepper.
See that biscuit over there? It was my attempt at the copycat recipe for Red Lobster Cheddar Bay Biscuits (which is super easy by the way).

The only things I changed in mine is I used the “Heart Healthy” Bisquick mix, and of course lowfat shredded cheddar, and nonfat milk.
The Bisquick I used did end up causing them to have a whole other texture (fluffier, rather than dense) which may or may not be a good thing. They werent really like the ones at Red Lobster because of that I think, but they were excellent nonetheless!
I was also thinking about how I love that asparagus is coming into season. It is cheaper and delicious! There are some produce items I always buy year round, regardless of when they are in season because I like to have them on hand (tomatoes, even though it gets tricky picking out good ones, bananas, etc), but obviously getting produce while it is in season is ideal since it is and more delicious and cost-effective!
Obviously these are pretty general, and certain items will vary state-to-state, but I figured I’d share some charts as a reminder if you are curious:

Halibut! But it is hard to find down here… so next up is definitely salmon though.
