A Date With 2 Bottles & Strawberry Cupcake Recipe

Let me tell you, yesterday was quite the day – a typical Monday I suppose. I blame this horrible Monday on the super good attitude I had last Monday. They cant all be winners!

I was so exhausted by the time I finally got off of work that training just wasn’t in the cards (well, that and a slight injury that has been bothering me throughout the weekend… I will talk about that soon on another day), so I headed home to get some stuff done and do a little relaxing.

For dinner I just made some fish, parmesan and herb angel hair, and steamed broccoli.


Look at that perfect little plate with everything in its own little round area. That is like my own personal heaven. No food touching.

After dinner, I actually took Kona on a walk since it was a really nice night, and we meandered around for a good 35 minutes.

After that, I settled in to catch up with some TV and a glass, 2 glasses a bottle of wine.

Pssh… don’t look at me like that, a bottle of wine  s only 4 glasses (or 2 really full ones).

And also, I had a hot date with my new O.P.I.


What? Normal people always make dates with bottles of wine and nail polish.

O.P.I. is so clever with their cutesie names. “A good man-darin is hard to find.”


Okay okay, time for the delicious strawberry cupcake recipe!

I am always bringing my baked goods into the office – my coworkers secretly love it (even though they say they are dieting or whatever) but recently they have been begging me to bake some strawberry cake or cupcakes. Apparently that is both of their favorite flavor of cake. So I promised to (eventually) deliver.

It was time to make it happen this weekend when I was in the baking mood! This was also a plus for me because I am not a huge fan of strawberry flavored things so I only ate half of one of these babies as a taste test (super moist and really delicious!) and didnt get too off track with eating a bunch of sweets 🙂

The cupcake recipe itself was adapted from this one. And the frosting is just my own take on a cream cheese frosting (with a strawberry flavor of course).

The cake portion doesn’t have too much bad stuff in it – but the frosting on the other hand…. well, it is frosting and in order to be delicious it needs lots of sugar Smile That’s just how it works!

Strawberry Cupcakes with Strawberry Cream Cheese Frosting

Prep time: 15 minutes  
Bake time: 25 minutes
Yield: 12


  • 3 tbsp strawberry jam or preserves (I used Smuckers strawberry preserves)
  • 1/2 cup finely chopped fresh strawberries, (plus more for garnish)
  • 1 ¼ cups all-purpose flour
  • 1 ¼ tsp baking powder
  • ¼ tsp salt
  • 3/4 cup of sugar
  • 1/2 cup (1 stick) of unsalted butter, room temperature (or pop in microwave for about 15 seconds to soften)
  • 3 large egg whites, room temperature
  • 1/2 tsp vanilla pure vanilla extract
  • red food coloring (I used a good sized dollop of red food coloring paste)
  • 1/3 cup milk
    For frosting:
  • 8 ounces reduced fat cream cheese, cold
  • 5 tbsp softened butter
  • 2 tbsp vanilla extract
  • 2 cups powdered sugar
  • 2 tbsp fresh strawberry purée (I threw some strawberry slices into my Magic Bullet to puree).
  • 1 tbsp strawberry jam or preserves


  1. Preheat oven to 350 degrees. And prep pan by lining a muffin tin with paper liners.
  2. In a small bowl, combine jam and chopped fresh strawberries.
  3. In a second bowl, mix flour, baking powder, and salt with a fork.
  4. In a large bowl, using a mixer beat sugar and butter until light and fluffy (about 2 minutes). Add egg whites, vanilla, and food coloring and beat until well combined.
  5. Add half of flour mixture and beat with mixer. Add milk and remaining flour mixture and beat on a low speed until just combine – don’t over mix.
  6. With spoon or spatula, fold in the strawberry mixture.
  7. Fill cupcake liners in your cupcake pans ¾ full and bake about 25 minutes, or until toothpick inserted in center comes out clean.
  8. Let cool completely before frosting.

       For Frosting:

  1. In medium bowl, using a mixture combine cream cheese, butter, and vanilla until fluffy.
  2. Gradually mix in powdered sugar (if you it all in there at once you will make a mess – trust me).
  3. By hand, stir in strawberry preserves and puree.
  4. To make frosting easier – transfer the frosting mixture to a large Ziplock bag and refrigerate for at least 45 minutes to let harden and then cut one tip off of corner for a mock frosting bag.

You can top them with fresh strawberry slices for garnish. I also find that these keep best in the fridge until ready to serve!

    Kona typically goes out 4-5 times per day.

  1. oh girl, i love my wine too 🙂 i used to drink only white but now i gravitate towards red…red makes me sip a little slower 😉 Back in college i used to drink more hard alcohol but now i just usually have beer or wine :)i love a glass (ahem, or bottle) after a really tough day at work.

    i’d say cookies are my fave to bake…i do a little bit of everything but i have the most fun with cookies!

    we bring nacho outside typically 3-4 times a day. on the weekends, it could be more. hes tiny so he doesnt need a ton of exercise, im sure if i had a bigger dog i’d be taking them out more!

  2. I prefer dates with beer and nail polish, personally, but if I was enjoying a bottle of OPI, I’d pair it with a bottle of white!

    And since I’m a fool with icing, I vote cookies. As long as there’s no icing involved, I’m a champ with dollops of cookie dough.

  3. I enjoy drinking wine. I typically buy white wine, but I like red too. I recently found some red wine that is CHOCOLATE wine. It rocks. In two weeks I can have a glass! 🙂

    I like to bake, but don’t do it all that often. I like to bake cookies, cupackes, pies, and bars, and some breads.

    We have two dogs, and they go in and out constantly. Since we both work all day, they roam around the house during the day, but when we are home, they go outside every hour or every two hours. I also take them outside to play, walk, and go to the park.

    Not a wine drinker. I’m much more of a beer girl. I love me some Bud Light and Mich Ultra.

    I like baking lots of different things..cookies, cake, bread, etc.

    I live on a farm so my dogs have a good 15 acres to play and get lost on most days. 🙂

  5. I love the no food touching!!! Ha!!! I really don’t like wine. I sorta wish I did. But I just don’t. Boyd probably gets out 5-6x per day. He’s lucky because we live super close to the office and can lte him out during the day to chase the bunnies!

  6. I love all baking … cupcakes, brownies, cookies, etc. I think I definitely have a sugar issue. 😉

    I like red and white wine. My favorite is probably a nice cold glass of a sweeter Riesling. Yum!
