Balsamic Chicken Tenderloins

Morning!

Since I didnt go to training last night, I will just jump right into dinner.

I was weirdly craving mashed potatoes. I rarely make them just because I am ridiculously impatient to wait for potatoes to boil. But the craving was so intense, that it had to be done. 

I boiled some red potatoes for what seemed like forever and mashed those babies up with some garlic. I even added a little bit of gravy. I’m not a big gravy fan but sometimes it just goes.

I also had some little chicken tenderloins that I marinated in some balsamic dressing (Newman’s Own).

I placed them in a flat dish (ok, Tupperware) and covered them with balsamic dressing and then sprinkled with some garlic powder and a little black pepper and let them sit for about 20 minutes before sauteing them in a pan (about 3 minutes on per side since they are small).

The chicken turned out super moist, you could cut it with a fork!

And of course I had some steamed broccoli and sliced tomatoes on the side.

I dont know what is going on but this week I have been waking up really late every morning. Just pretty much dragging myself out of bed at the last possible moment because I just havent been sleeping that great. I’m thinking a new (more comfortable) mattress may be needed ASAP.

Regardless, I have my gym bag packed up to hopefully leave work a couple minutes early again to make it to the earlier training!

  • What is your favorite way to eat potatoes? (mashed, french fries, baked, etc)
    Mashed for me, or baked!
  • Gravy – yay or nay?
  • If you are having a hard time sleeping or dont feel rested, what is usually the cause?
    I rarely have issues sleeping but when I’m not feeling rested it is usually because I am having a hard time getting comfortable, am sick, or sometimes when I’m stressed I dont sleep well either.

  1. i havent made mashed potatoes in so long–i remember my ex boyfriend used to eat the box kind all the time, gross. fresh is so much better but time consuming! I feel that pain while waiting for my sweet potatoes to roast all the time 😉 my aunts totally unhealthy mashed potatoes are my fave but if i’m trying to be healthy then baked i suppose 😉

    i have a hard time sleeping if i drank too much caffeine throughout the day and def when i’m stressed/worried. i hope you get some good rest soon!

  2. I pretty much like potatoes any way … but I’m not a huge fan of plain baked potatoes. Baked SWEET potatoes are a different story! 😉

  3. I just learned how to make “good” mashed potatoes that my husband loves and I can eat them without gravy but….I love Thanksgiving time because that is when I have to break out the gravy.

  4. I love baked potatoes or baked fries the best. That chicken looks amazing. I have two general causes of sleepless – stress and overtraining. It’s one of those two most every time.

  5. I love potatoes every which way, but I especially love twice-baked potatoes; which usually means they have twice the fat but they are so darn delicious!

    And when I’m stressed, sleep is the first thing that gets affected! Or if my husband is having a hard time sleeping and constantly moving around, that doesn’t help either.

  6. Roasted potatoes and mashed potatoes are awesome (and baked potatoes with lots of toppings), but I eat sweet potatoes much more often than either of these.

    I have zero trouble sleeping most nights (I think because of my crazy busy schedule – once I lie down, I’m exhausted), but on the rare occasion when I cannot sleep, it’s typically stress. OR – if we are leaving the next morning for a trip, I can’t sleep because I’m so excited. Yes, I am five. 🙂

  7. I think you should get a tempurpedic! We have one and we don’t know what we would do without it!!!
    I love pretty much potatoes in all forms. I’m getting kind of hungry for them now actually…
    I usually sleep REALLY well, but when I can’t its usually b/c I’m really stressed or its too hot or something. Or I’m sick, that usually gets me. Luckily that doesn’t happen often. Hope you get some good rest soon!!
