Mike, You’re So Refreshing

Monday morning – we meet again.

Let’s back up – I had some pretty good eats yesterday. I did quite a bit of snacking, but I enjoyed a delicious breakfast that included poached eggs on toast, turkey bacon, and some watermelon and sliced banana on the side.


We ended up spending pretty much all afternoon at the pool in the sun and it was hot-hot-hot. Hot means refreshing drinks were needed. Including this:

lemon2I’m glad that they warned me it contains alcohol – cuz’ that shit tastes like juice. Juice with 8% alcohol that is…. Kidding (but not really).

I’m not really into a lot of girly drinks (though I love a good Cosmo) but these things are the absolute most refreshing thing during the summer.

I’m just happy to see that “Mike” finally listened to my 500 letters that I sent the last 4 summers of my life requesting they put this stuff in a huge ass can instead of just a small glass bottle. It is just so convenient, ya know?

Anyway, after all that – it was time for dinner. We grilled some steaks, steamed some asparagus, baked some crescent rolls (per Torrance’s request), and I made some crashed potatoes.


If you havent experienced some crashed potatoes, I highly recommend it…

Now, I’m going to be honest here. I had all intentions of taking pictures of the process and sharing the super easy recipe with you, but after spending lots of quality time all afternoon long with Mike, it was a miracle I even cooked dinner and didn’t burn myself, slice my finger open, drop a whole carton of eggs on the floor, or forget to turn the oven on and not realize until 30 minutes later when the timer went off when my food was “done” (yes all of those things have happened). I mean really, it resembled an episode of Andrea’s My Drunk Kitchen.

So, I promise next time, I will take some pictures to show ya how it’s done. I would share the recipe without it, but it is actually somewhat hard to explain – pictures always help right?

    Pear cider is my go to for the Summer. Little bit of fruit, little bit of alcohol, lots of delicious.

  2. I’m pretty fond, now and then, of a beer shandy in the summer. There’s a brewery in Durham called Fullsteam that makes a summer basil beer. Add some lemonade to that, maybe a little ginger liqueur, and we’re in business.

  3. you are too funny girl, hahaha. I had some of Mike’s harder fruit punch last weekend and I didnt like it too much (it tasted like cough syrup) but maybe yours was better. I made a pina colada for myself to relax before dinner last night and it was awesome to have on a hot day!

    ummm definitely the jalepeno burgers we made last night…really really delicious. i’m drooling just thinking about it, lol

    • Oh yum! I actually prefer the Mikes “lighter” lemonade versions because they aren’t as sweet so I def know what you’re talking about!

  4. Is that ONE piece of bacon? How can you eat just one??? 🙂 Those eggs look so good right now and I need that recipe for the potatoes. Maybe not after Mikes though…totally understandable! Iced-T is usually my refreshing go to drink! Love it!

  5. I always love me a good ol’ Corona w/lime in the summer when I’m hanging out by the pool; I guess I’m pretty low-maintenance 🙂

    And extra delicious foods came in the form of the AZ BBQ Festival; I think I might have eaten an entire pig…it was fantastic!

  7. I don’t think I’ve had one of those lemonades since college! I’ve definitely become way less of a girly-girl when it comes to drinks, but now am ready for one of those and an afternoon at the pool!

    • Haha well, I have no control in other areas- I could probably eat a whole block of cheese or a whole baguette in a sitting!! 🙂
