Zesty Orange Salmon Rub & Weight of the Nation


I hope everyone’s week is going swimmingly. Mine has shaped up very much since last week – that’s for sure, so, not complaining!

I took last night off from training (but back tonight!) and I have another simple recipe for you in the form of yet another fish rub/marinade.

Are you seeing a trend? I’m just in a fishy mood lately.

Now, I used salmon for this (which was excellent) but this same mix would also be great on a nice flakey white fish, like cod perhaps.

This one is more of a rub since it only offers a little coating of “liquid” by the way, so it doesn’t require any marinating beforehand, etc.


Zesty Orange Salmon Rub

Yeild: Enough for 2 filets
Prep time: 5 minutes
Cook time: 6—10 minutes


  • 1 tsp orange rind
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tsp ground coriander
  • 1 tsp chili powder
  • 1 tbsp brown sugar
  • 1/2 cup orange juice


  1. For first ingredient, finely grate a piece of orange rind until you have enough to fill one tsp.
  2. Combine all DRY ingredients (not orange juice) in small bowl.
  3. Pour orange juice in a different bowl and then dip salmon filets into it so that both sides of filet have a coating.
  4. Transfer salmon to bowl with spices and “dip” each side of the filet so it is has a good amount on each side. (note: it wont be completely encrusted with spices, but they should be spread out evenly on filet)
  5. Sear salmon on stove in a heated medium skillet. About 3-4 minutes per side depending on thickness of filet.


I, of course served mine along some cous cous (which is my favorite to pair with fish!) and some steamed broccoli and cauliflower.

Weight of the Nation. An HBO, four episode series. I don’t have HBO (I’m cheap) but luckily they offer the episodes for free online.

So I hunkered down with my Torrance’s iPad and went to town watching the first episode.


This one is not strictly food related like my other documentary binge I had. It focuses on America’s obesity epidemic. The first episode is about an hour long and has some awesome info. It focuses on the consequences of obesity. I actually had to fast forward through a couple spots (I am ADD), but it talks a lot about heart disease and studies that they have done/are doing in regards to the connection with childhood obesity and obesity as an adult.

The thing I found really interesting about this one is it talked a lot about the relationship between poverty/income and obesity. 9 out of 10 of our heaviest states in the US are also our poorest. They didn’t specifically say this (unless I fast forwarded through this part) but I’m sure that has a lot to do with inexpensive processed foods we have.

It also touched on how the percentage of obesity has risen like crazy since the 80’s.

Another fun fact (or reminder really) was a doctor that described his sadness in the fact that this is something that is 97% preventable. It’s not an act of nature, or something that just happens like some types of cancer. It is something that we can actually be proactive in.

    For me, lunch. I am usually at somewhat of a loss for it. I love breakfast foods (eggs, mmm!) and I love dinner because I actually get to cook.
  • In one word – describe what you think about America’s obesity epidemic. (sad, scary, annoying, etc) You can elaborate if you want, I am just curious what one word comes to mind first.
    For me, it is “sad.”

  2. i’m having salmon tonight for dinner too, yay!

    i’m trying out kale chips for the first time tonight, i’ll let ya know how that goes..otherwise veggiewise i usually do roasted broccoli, roasted asparagus, grilled/frozen corn, peas, edamame, SPINACH (obv a huge love of mine)

    obesity epidemic=sad. Its even sadder that so many people have to resort to weight loss surgery in order to lose their weight…quick fix isn’t going to keep it off for people!

  3. I was watching some of those mini episodes on the plane yesterday!!!!! I was watching a part about how overweight people experience crazy discrimation. The part that struck me was how women are discriminated against when their BMI is 27, men when it is 35. Isn’t that CRAZY!!?!?!? I want to watch more of it. Probably while I’m blogging. Lol.

  5. I love roasting any of my veggies. You already know about kale chips, but I also roast butternut squash, zucchini and squash, cauliflower, and broccoli. Just add a little olive oil and seasoning and throw them in the oven at a fairly high heat (I do anywhere from 375-425). 🙂

    I think the word that comes to my mind is “frustrating”. It’s not that difficult to be healthy or get help learning how. I’m not saying everyone needs to be fit and in tip top shape, but it’s frustrating when people let their weight take like ten years off their life.

  7. That salmon rub looks awesome! I’ll definitely give it a try next week. We had fresh crabcakes tonight (with blue crab meat – sooooo good) with roasted zucchini and squash and a baked sweet potato. Roasted veggies are always my favorite side dish! I also like those little individual boxes of steamable edamame and sea salt.

    I would say my word is “frustrating” because it’s like everyone knows the problem and the solution, yet it’s just easier/more convenient to choose the foods and lifestyle that hinder instead of help.

    • Definitely check out the bourbon marinade (for salmon) too which is under recipes. My boyfriend loves that one!
